Buffalo Chicken Celery Spoons

If you’re looking for the perfect snack to add to your tailgate menu, look no further. These buffalo chicken celery “spoons” are healthy and satisfying. You can make quite a few of these with little effort or skill in the kitchen. These come together in only a few minutes and include common ingredients found in your pantry.

When I think of what to serve at a tailgate, I think chicken wings, pizza, and sliders. This app gives you the same satisfying taste of chicken wings, but with much less cholesterol and fat. Rather than use chicken wings or thighs, I’m using chicken breast meat, mixed with greek yogurt and buffalo sauce.

Also, is there a more perfect pairing to buffalo chicken than a celery stick? I think not! Adding the buffalo chicken to the celery stalk is not only delicious and palate-cleansing but conveniently keeps your hands clean.

Buffalo Chicken Celery Spoons

Ingredients
  

  • 2 Boneless skinless chicken breasts
  • 1 Celery bunch washed, trimmed
  • 1/4 cup Cilantro washed, finely chopped
  • 1/4 cup Fat free Greek yogurt
  • 1/3 cup Buffalo sauce
  • 1 Lime Juiced
  • 1 tbsp Ranch seasoning
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper

Instructions
 

  • Boil whole chicken breasts for about 15 minutes or until chicken reaches 165 degrees farenheight.
  • Remove from water and shred chicken, set in a bowl.
  • After you've washed and trimmed your celery ribs, cut ribs into 3 inch "spoons."
  • Combine chicken, cilantro, yogurt, buffalo sauce, lime juice, ranch seasoning, salt, and pepper. Mix well.
  • Scoop buffalo chicken mixture into the celery stalks leaving a "handle."
  • Top with bleu cheese crumbles and serve on a platter

Notes

Pro tip: Use a gloved hand to pinch buffalo chicken mixture and press into celery rib.
