Salsa Verde with Tomatillo and Avocado

My salsa verde is made with tomatillos and avocado and is excellent on tacos and grilled meats. You could also use it just as a dip with chips to share with your friends and family. Personally, I love to make a big batch of this stuff and keep it on hand next to the ketchup and the rest of our condiments.
Each time I’ve brought this salsa verde to a party or potluck, I’ve always come home with an empty bowl. It has a creamy texture from the avocado and the combination of heat, lime, and cilantro makes this salsa verde hard to put down.
Feel free to take the seeds out of the serrano peppers or leave them in for more heat. If you really love spice, you can boil 1 habanero alongside the serrano peppers and tomatillos to take the heat to an atomic level.

Creamy Salsa Verde
Ingredients
- 1/2 lb tomatillos peeled and washed
- 2 serrano peppers
- 2 limes
- 4 green onions washed
- 1 garlic clove peeled
- 1 cup chopped cilantro washed
- 1/2 avocado
- 1/4 cup water
- 1 tsp salt
Instructions
- After you've washed and chopped your vegetables, bring a small pot of water to a boil.
- Add tomatillos and serrano peppers to pot of boiling water. Boil until tomatillos turn brown, but remain green on top, about 10 minutes.
- Save 1/4 cup of water from the pot, remove vegetables and add to blender. Allow to cool for about 5 minutes.
- Add raw garlic clove, cilantro, avocado, green onion, salt, and the saved water to the blender.
- Blend until smooth.
- Pour the salsa verde into a bowl for serving and allow to cool to room temperature.
