- Begin by chopping 1/2 head of cabbage into small pieces. Place the chopped cabbage in a large bowl.
- Next, wash and chop 1 cup of parsley and add to the cabbage.
- In a separate bowl, mix together 1/4 cup of white vinegar, 1 tbs of whole grain mustard, 2 tbs olive oil, salt, and pepper to taste.
- Pour the dressing over the cabbage mixture in the large bowl, stirring until everything is evenly coated.
- Serve the healthy cabbage slaw without mayo cold or at room temperature.
