Parsley and Cabbage Slaw
Nutritious coleslaw without mayonaise

- 1/2 head Cabbage
- 1 cup Parsley
- 1/4 cup White vinegar
- 1 tbsp Whole grain mustard
- 2 tbsp Olive oil
- Salt and pepper to taste
Begin by chopping 1/2 head of cabbage into small pieces. Place the chopped cabbage in a large bowl.
Next, wash and chop 1 cup of parsley and add to the cabbage.
In a separate bowl, mix together 1/4 cup of white vinegar, 1 tbs of whole grain mustard, 2 tbs olive oil, salt, and pepper to taste.
Pour the dressing over the cabbage mixture in the large bowl, stirring until everything is evenly coated.
Serve the healthy cabbage slaw without mayo cold or at room temperature.
